Strawberry Blueberry Shortcake with Vanilla Cream

- 1 cup, fresh blueberries
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Step 1: Preheat oven to 375°F (190°C). Whisk 2 cups all-purpose flour, 1/4 cup granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt in a large bowl.
- Step 2: Cut 1/2 cup cold unsalted butter into small cubes, add to flour mixture, and use a pastry cutter until crumbly.
- Step 3: Stir in 1 cup buttermilk until just combined, then gently fold in 1 cup sliced strawberries and 1 cup fresh blueberries.
- Step 4: Divide batter into 6 portions on a parchment-lined baking sheet. Bake 20-25 minutes until golden and a toothpick comes out clean.
- Step 5: While baking, beat 1 cup heavy cream, 1 tablespoon powdered sugar, and 1/2 teaspoon vanilla extract until stiff peaks form.
