  1. Step 1: In a small saucepan, combine 1 cup sliced strawberries, 1/2 cup diced rhubarb, 1/4 cup granulated sugar, and 1/4 cup water. Bring to a gentle simmer over medium heat and cook for 10-12 minutes, stirring occasionally, until the fruit is soft and the mixture has thickened.
  2. Step 2: Remove from heat and let cool to room temperature.
  3. Step 3: In a glass, layer 2 tbsp plain Greek yogurt, then 1/4 cup cooled strawberry-rhubarb compote, then 2 tbsp vanilla Greek yogurt.
  4. Step 4: Repeat the layering once, then top with 1/4 cup toasted sliced almonds and 1 tbsp honey.
