Ingredients
- 2 tbsp olive oil
- 1 medium, finely diced onion
- 3 cloves, minced garlic
- 1, thinly sliced red bell pepper
- 1, sliced into half-moons zucchini
- 1 cup, florets broccoli
- 1/2 cup, halved cherry tomatoes
- 2 tbsp, chopped basil
- 2 tbsp, chopped parsley
- 1 tbsp lemon juice
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add 1 medium diced onion and cook for 3 minutes until softened, then add 3 minced garlic cloves and cook for 1 minute until fragrant without browning.
- Step 2: Add 1 sliced red bell pepper, 1 sliced zucchini, and 1 cup broccoli florets to the skillet, stirring to coat in oil. Cook for 5 minutes, stirring occasionally, until vegetables are tender-crisp.
- Step 3: Stir in 1/2 cup halved cherry tomatoes, 2 tbsp chopped basil, 2 tbsp chopped parsley, and 1 tbsp lemon juice. Season with salt and pepper to taste, then cook for 2 more minutes until tomatoes are warmed through and flavors meld.
