- 1 baguette
- 2 cups ripe tomatoes
- 1/4 cup fresh basil
- 3 tbsp extra-virgin olive oil
- 2 cloves garlic
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 375°F. Cut baguette into 1/2-inch thick slices and arrange on a baking sheet. Brush both sides with 1 tbsp olive oil and bake for 8 minutes until golden and crisp.
- Step 2: Dice tomatoes into 1/4-inch cubes, discarding excess juice. Finely chop 3 basil leaves and mince garlic cloves. Combine tomatoes, basil, garlic, 2 tbsp olive oil, salt, and pepper in a bowl.
- Step 3: Let mixture sit for 10 minutes to meld flavors. Spoon onto toasted baguette slices, ensuring each gets an even layer. Drizzle with remaining 1 tbsp olive oil just before serving.
