Sunbeam Lemon-Herb Roasted Chicken Thighs

Ingredients
- 1.5 lbs chicken thighs
- 2 tbsp olive oil
- 1 medium lemon
- 2 tsp chopped fresh thyme
- 3 cloves minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels, then season evenly with 1 tsp salt and 1/2 tsp black pepper.
- Step 2: Place chicken skin-side up in a single layer in a baking dish. Drizzle with 2 tbsp olive oil, then scatter 3 minced garlic cloves and 2 tsp chopped thyme over the top.
- Step 3: Cut 1 medium lemon into 8 wedges, then place wedges around the chicken. Roast for 35-40 minutes until chicken reaches 165°F (74°C) internally and skin is crisp and golden.
- Step 4: Remove chicken and lemon wedges from the dish, reserving pan juices. Squeeze the roasted lemon wedges over the chicken and serve immediately.
