Sunbeam Lemon-Herb Roasted Chicken Thighs

  1. Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels, then season evenly with 1 tsp salt and 1/2 tsp black pepper.
  2. Step 2: Place chicken skin-side up in a single layer in a baking dish. Drizzle with 2 tbsp olive oil, then scatter 3 minced garlic cloves and 2 tsp chopped thyme over the top.
  3. Step 3: Cut 1 medium lemon into 8 wedges, then place wedges around the chicken. Roast for 35-40 minutes until chicken reaches 165°F (74°C) internally and skin is crisp and golden.
  4. Step 4: Remove chicken and lemon wedges from the dish, reserving pan juices. Squeeze the roasted lemon wedges over the chicken and serve immediately.
