  1. Step 1: Pat 12 large sea scallops dry with paper towels and season lightly with salt and pepper.
  2. Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering. Add scallops in a single layer and cook undisturbed for 2 minutes until golden brown.
  3. Step 3: Flip scallops and cook for 1-2 minutes more until just opaque in the center; remove and set aside.
  4. Step 4: In the same skillet, melt 2 tbsp butter over medium heat. Add 1 tbsp minced shallot and cook for 1 minute until fragrant.
  5. Step 5: Stir in 1/4 cup heavy cream, 1 tbsp lemon juice, and 2 tbsp chopped dill. Simmer for 2 minutes until slightly thickened.
  6. Step 6: Return scallops to the skillet and spoon sauce over them. Cook for 1 minute more to reheat, then serve immediately.
