Sunny Beach Seared Scallops with Lemon-Dill Sauce

Ingredients
- 12 large sea scallops
- 1, zested and juiced lemon
- 2 tbsp, finely chopped dill
- 1/4 cup heavy cream
- 1 tbsp, minced shallot
- 2 tbsp butter
- 1 tbsp olive oil
Instructions
- Step 1: Pat 12 large sea scallops dry with paper towels and season lightly with salt and pepper.
- Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering. Add scallops in a single layer and cook undisturbed for 2 minutes until golden brown.
- Step 3: Flip scallops and cook for 1-2 minutes more until just opaque in the center; remove and set aside.
- Step 4: In the same skillet, melt 2 tbsp butter over medium heat. Add 1 tbsp minced shallot and cook for 1 minute until fragrant.
- Step 5: Stir in 1/4 cup heavy cream, 1 tbsp lemon juice, and 2 tbsp chopped dill. Simmer for 2 minutes until slightly thickened.
- Step 6: Return scallops to the skillet and spoon sauce over them. Cook for 1 minute more to reheat, then serve immediately.
