- 4 large eggs
- 4 oz smoked salmon
- 1/2 avocado
- 1 tbsp olive oil
- 1 lemon
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a non-stick skillet over medium-low heat until shimmering.
- Step 2: Carefully crack 4 large eggs into the skillet, spacing them apart. Season each egg with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 3: Cook for 3-4 minutes, or until whites are set and yolks remain runny, adjusting heat to prevent browning.
- Step 4: While eggs cook, slice 1/2 ripe avocado and arrange on a plate.
- Step 5: Place 4 oz smoked salmon on top of the avocado slices.
- Step 6: Once eggs are done, spoon them over the salmon and avocado, then squeeze 1 lemon wedge over the top.
