Sunrise Vegetable Toss

Ingredients
- 2 medium zucchini
- 1 red bell pepper
- 1 yellow onion
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 cup chopped fresh basil
Instructions
- Step 1: Preheat oven to 425°F (220°C). Trim 2 medium zucchini ends, cut into 1/2-inch thick half-moons, and place on a parchment-lined baking sheet.
- Step 2: Slice 1 red bell pepper into 1/2-inch strips and quarter 1 yellow onion into wedges; add to the baking sheet with the zucchini.
- Step 3: Drizzle 3 tbsp olive oil over vegetables, then sprinkle with 1 tsp dried oregano and 1/2 tsp sea salt, tossing until evenly coated.
- Step 4: Roast for 20 minutes until edges are golden and tender, stirring once halfway through.
- Step 5: Remove from oven, sprinkle with 1/4 cup chopped fresh basil, and serve warm.
