Sweet and Savory Half-Pancakes with Banana and Chives

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 egg
- 2 tbsp, melted butter
- 1 medium, mashed banana
- 2 tbsp, finely chopped chives
- 1/4 cup maple syrup
- 2 tbsp powdered sugar
Instructions
- Step 1: In a medium bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, and 1/4 tsp salt.
- Step 2: In a separate bowl, mix 1 cup milk, 1 egg, 2 tbsp melted butter, and 1 medium mashed banana until smooth.
- Step 3: Combine wet and dry ingredients, mixing until just combined (do not overmix). Divide the batter into two equal portions.
- Step 4: Stir 2 tbsp finely chopped chives into one batter portion for savory pancakes.
- Step 5: Heat a non-stick skillet over medium heat. Lightly butter the surface.
- Step 6: Pour 1/4 cup of sweet batter (without chives) onto the skillet for each pancake, cooking for 2-3 minutes until bubbles form on top.
- Step 7: Flip and cook for another 2-3 minutes until golden brown. Repeat with savory batter (with chives).
- Step 8: Serve sweet pancakes topped with 1/4 cup maple syrup and powdered sugar, and savory pancakes with additional chives.
