- 1 large Honeycrisp apple
- 3 tbsp tahini
- 1 tbsp rice vinegar
- 1 tbsp white miso paste
- 1 tsp honey
- 2 tbsp water
- 2 tbsp extra virgin olive oil
- 1/4 cup pumpkin seeds
Instructions
- Step 1: Whisk 3 tbsp tahini, 1 tbsp rice vinegar, 1 tbsp white miso paste, 1 tsp honey, and 2 tbsp water in a small bowl until smooth; gradually add 2 tbsp extra virgin olive oil while whisking until emulsified, then season with salt and pepper to taste.
- Step 2: Place 4 oz chopped kale in a large bowl and drizzle with 1 tbsp of the dressing; massage with hands for 2-3 minutes until leaves soften and darken.
