Takeoff Tandoori Chicken

Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 1/2 cup plain yogurt
- 2 tbsp lemon juice
- 3 cloves, minced garlic
- 1 tbsp, grated ginger
- 2 tsp tandoori spice blend
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 tbsp olive oil
- 2 tbsp, chopped fresh cilantro
Instructions
- Step 1: In a bowl, combine 1/2 cup plain yogurt, 2 tbsp lemon juice, 3 minced garlic cloves, 1 tbsp grated ginger, 2 tsp tandoori spice blend, 1/2 tsp cumin, 1/2 tsp paprika, and 1/2 tsp salt. Whisk until smooth.
- Step 2: Cut 1.5 lbs boneless skinless chicken breasts into 1-inch cubes. Add to the yogurt mixture and stir to coat evenly. Cover and marinate in the refrigerator for 2 hours.
- Step 3: Preheat a grill or grill pan over medium-high heat. Brush with 1 tbsp olive oil. Thread chicken cubes onto skewers (soak wooden skewers in water for 30 minutes first).
- Step 4: Grill chicken for 8-10 minutes, turning occasionally, until golden and cooked through (internal temperature 165°F).
- Step 5: Garnish with 2 tbsp chopped fresh cilantro and serve with lemon wedges.
