Tangy Citrus-Glazed Salmon with Herbed Quinoa

- 4 (6 oz each) salmon fillets
- 3 tbsp fresh lemon juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tsp grated fresh ginger
- 1 cup quinoa
- 2 tbsp chopped fresh dill
- 1 tsp lemon zest
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat salmon fillets dry with paper towels, then season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Whisk together 3 tbsp fresh lemon juice, 2 tbsp honey, 1 tbsp soy sauce, and 1 tsp grated ginger in a small bowl until fully combined.
- Step 3: Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering, then add salmon skin-side down; cook for 4 minutes until golden brown before flipping.
- Step 4: Brush half the citrus glaze over salmon, transfer skillet to a preheated 400°F oven, and bake for 8 minutes until salmon is opaque and flakes easily.
- Step 5: Meanwhile, cook 1 cup quinoa in 2 cups water for 15 minutes until tender, then fluff with a fork and stir in 2 tbsp chopped dill and 1 tsp lemon zest while still warm.
