Taro Root and Vegetable Stew
A hearty Okinawan-inspired stew with earthy taro, seasonal vegetables, and a subtle ginger infusion.

Ingredients
- 2 cups, diced taro root
- 1 cup, sliced carrots
- 1 cup, diced zucchini
- 4 cups dashi stock
- 1 tbsp, grated ginger
- 1 tbsp soy sauce
- 3, sliced green onions
- 1 tsp sesame oil
Instructions
- Step 1: Place taro, carrots, and zucchini in a pot. Add dashi stock and bring to a gentle simmer over medium heat.
- Step 2: Add grated ginger and soy sauce. Cover and simmer for 25 minutes until vegetables are tender and taro is easily pierced with a fork.
- Step 3: Stir in green onions and sesame oil. Simmer uncovered for 3 minutes to blend flavors. Adjust salt if needed.
