Tomato and Rosemary Panini

Ingredients
- 4 slices sourdough bread
- 1/2 cup (sliced 1/4 inch thick) tomatoes
- 1 tbsp (finely chopped) fresh rosemary
- 2 tbsp (torn) fresh basil
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 oz (sliced) mozzarella cheese
- 1 tbsp butter
Instructions
- Step 1: In a small bowl, mix 1/2 cup tomato slices, 1 tbsp fresh rosemary, 2 tbsp fresh basil, 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp black pepper. Let sit for 5 minutes to infuse.
- Step 2: Heat a skillet over medium heat and add 1 tbsp butter. Place 4 sourdough slices in the skillet and toast for 1 minute per side until golden.
- Step 3: Spread tomato mixture evenly over 2 toasted bread slices. Top with 2 oz mozzarella cheese slices, then cover with remaining bread slices. Butter the top side of each sandwich and cook for 3-4 minutes per side in the skillet until cheese melts and bread is crisp.
