Tomato-Basil Soup with White Bean Puree

  1. Step 1: Heat olive oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until soft and translucent, stirring occasionally.
  2. Step 2: Add minced garlic and cook for 1 minute until fragrant, then stir in diced tomatoes (with juice), vegetable broth, 1/4 tsp salt, and 1/8 tsp black pepper; bring to a simmer.
  3. Step 3: Remove 1 cup of the soup and blend with drained cannellini beans until completely smooth, then return to the pot. Simmer uncovered for 15 minutes, stirring occasionally, until flavors meld. Stir in chopped basil just before serving.
