Tomato-Glazed Meatloaf with Herb-Infused Bread Crumbs

- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup, finely chopped onion
- 2 cloves, minced garlic
- 1/2 cup bread crumbs
- 1 egg
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly coat a 9x5-inch loaf pan with 1 tbsp olive oil.
- Step 2: In a large bowl, combine 1 lb ground beef, 1/2 lb ground pork, 1/2 cup finely chopped onion, 2 minced garlic cloves, 1/2 cup bread crumbs, 1 egg, 1 tsp dried thyme, 1 tsp salt, and 1/2 tsp black pepper. Mix gently with hands until just combined.
- Step 3: Press mixture evenly into the prepared pan, smoothing the top with a spatula.
- Step 4: Whisk 1/4 cup ketchup, 2 tbsp brown sugar, and 1 tbsp apple cider vinegar in a small bowl. Pour evenly over the meatloaf.
- Step 5: Bake 50-55 minutes until internal temperature reaches 160°F (71°C) and glaze bubbles and caramelizes.
