Turmeric-Lemon Roasted Chicken Thighs

- 1.5 lbs, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tbsp, ground turmeric
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 2, juiced lemon
- 1, sliced lemon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 1.5 lbs chicken thighs dry with paper towels, then rub with 2 tbsp olive oil, 1 tbsp ground turmeric, 1 tsp dried oregano, 1/2 tsp garlic powder, and 1/4 tsp black pepper.
- Step 2: Arrange seasoned chicken thighs in a single layer in a baking dish, skin-side up. Place 1 sliced lemon on top of the chicken.
- Step 3: Roast in the preheated oven for 35-40 minutes until golden brown and the internal temperature reaches 165°F (74°C), turning once halfway through.
- Step 4: Remove from oven and drizzle with 2 tbsp fresh lemon juice. Let rest for 5 minutes before serving to lock in juices.
