Turmeric-Lemon Roasted Chicken Thighs

  1. Step 1: Preheat oven to 400°F (200°C). Pat 1.5 lbs chicken thighs dry with paper towels, then rub with 2 tbsp olive oil, 1 tbsp ground turmeric, 1 tsp dried oregano, 1/2 tsp garlic powder, and 1/4 tsp black pepper.
  2. Step 2: Arrange seasoned chicken thighs in a single layer in a baking dish, skin-side up. Place 1 sliced lemon on top of the chicken.
  3. Step 3: Roast in the preheated oven for 35-40 minutes until golden brown and the internal temperature reaches 165°F (74°C), turning once halfway through.
  4. Step 4: Remove from oven and drizzle with 2 tbsp fresh lemon juice. Let rest for 5 minutes before serving to lock in juices.
