  1. Step 1: Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise, scoop out seeds, and place cut-side down on a baking sheet. Bake for 40-45 minutes until tender. Cool slightly, then scrape strands with a fork into a bowl.
  2. Step 2: In a saucepan, heat 1 tablespoon olive oil over medium heat. Add crushed tomatoes and cook for 5 minutes to reduce slightly. Stir in 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Step 3: Mix spaghetti squash strands with tomato sauce and 1 cup chopped spinach until combined. Transfer to a baking dish, top with 1/2 cup grated mozzarella and 1/4 cup grated Parmesan. Bake for 15 minutes until cheese is melted and bubbly.
