Vermouth-Infused Mushroom Toasts with Thyme

Ingredients
- 1 cup, thinly sliced white button mushrooms
- 2 tbsp dry vermouth
- 1 tbsp, plus extra for garnish fresh thyme leaves
- 2 tbsp extra virgin olive oil
- 1 clove, minced garlic
- 4 slices crusty sourdough bread
- 1/4 tsp sea salt
Instructions
- Step 1: Heat 2 tbsp extra virgin olive oil in a medium skillet over medium heat until shimmering, then add 1 minced garlic clove and sauté for 30 seconds until fragrant but not browned.
- Step 2: Add 1 cup thinly sliced white button mushrooms and 2 tbsp dry vermouth to the skillet, stirring to coat. Cook for 8 minutes, stirring occasionally, until mushrooms release their liquid and the vermouth has reduced by half.
- Step 3: Stir in 1 tbsp fresh thyme leaves and 1/4 tsp sea salt, then remove from heat and let rest for 2 minutes to allow flavors to meld.
- Step 4: Toast 4 slices of crusty sourdough bread until golden and crisp. Divide the mushroom mixture evenly over the toast slices and garnish with extra thyme leaves.
