Visible Light Lemon-Dill Cod with Asparagus

Ingredients
- 4 (6 oz each) cod fillets
- 1 bunch (12 oz) asparagus
- 1 medium lemon
- 2 tbsp chopped fresh dill
- 2 tbsp olive oil
- 2 cloves minced garlic
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 4 cod fillets dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. Trim woody ends from 1 bunch asparagus (12 oz) and cut into 2-inch pieces.
- Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add asparagus and cook for 5-6 minutes until crisp-tender, stirring occasionally. Transfer to a plate.
- Step 3: Add 1 tbsp olive oil to the same skillet. Sear cod fillets for 4-5 minutes per side until golden and flaky when tested with a fork.
- Step 4: Reduce heat to medium, add 2 minced garlic cloves to the skillet, and cook for 30 seconds until fragrant. Stir in 2 tbsp chopped dill, 1/2 medium lemon's juice, and 1 tbsp butter. Simmer for 1 minute until sauce thickens slightly. Pour sauce over cod and asparagus.
