Whipped Feta and Roasted Cherry Tomato Dip
A creamy, tangy dip made with whipped feta and sweet roasted tomatoes, perfect for crudités or pita bread.

Ingredients
- 8 oz feta cheese
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 clove garlic
- 1/4 cup fresh basil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp lemon juice
- 1/4 cup Greek yogurt
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 1 cup halved cherry tomatoes with 1 tbsp olive oil, 1 minced garlic clove, and a pinch of salt. Spread on a baking sheet and roast for 15 minutes until softened and slightly caramelized.
- Step 2: In a food processor, combine 8 oz crumbled feta, 1/4 cup chopped basil, 1/4 tsp salt, 1/8 tsp black pepper, and 2 tbsp lemon juice. Process until smooth, scraping sides as needed.
- Step 3: Transfer feta mixture to a bowl. Stir in 1/4 cup Greek yogurt and the roasted tomatoes with their pan juices. Mix well and adjust seasoning. Serve immediately with pita or vegetables.
