Instructions

  1. Step 1: In a large bowl, combine 250g all-purpose flour, 5g salt, and 7g active dry yeast. Create a well in the center and add 150ml lukewarm water and 15ml olive oil. Mix until a shaggy dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.
  2. Step 2: Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour until doubled in size.
  3. Step 3: Punch down the dough, divide into two portions, and roll each into a 1/4-inch-thick circle on a floured surface.
  4. Step 4: Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside for 20 minutes.
  5. Step 5: Transfer one dough circle to a floured pizza peel. Brush with 1 tbsp extra virgin olive oil, then evenly top with 150g halved cherry tomatoes, 2 minced garlic cloves, 1/4 tsp red pepper flakes, and 1 tbsp fresh dill.
  6. Step 6: Bake for 8-10 minutes until the crust is golden and tomatoes are slightly softened.
  7. Step 7: Remove from oven, immediately sprinkle with 50g crumbled feta cheese. Let rest for 2 minutes before slicing.
