Yuzu-Infused Miso Glazed Salmon with Sesame Greens

Ingredients
- 8 oz salmon fillets
- 2 tbsp white miso paste
- 1 tbsp mirin
- 1 tsp toasted sesame oil
- 4 cups bok choy
- 1 tsp sesame seeds
- 1/2 tsp rice vinegar
- 1/4 tsp sugar
Instructions
- Step 1: Whisk 2 tbsp white miso paste, 1 tbsp mirin, 1 tsp toasted sesame oil, 1/2 tsp rice vinegar, and 1/4 tsp sugar in a small bowl until smooth.
- Step 2: Pat 8 oz salmon fillets dry and place skin-side down in a non-stick skillet over medium-low heat; cook for 5 minutes until skin is crisp.
- Step 3: Brush half the miso glaze over the salmon, flip, and cook for 3 more minutes until the glaze is glossy and bubbling.
- Step 4: Steam 4 cups bok choy in a steamer basket for 3 minutes until bright green and tender-crisp.
- Step 5: Plate the salmon over steamed bok choy, drizzle with remaining glaze, and sprinkle with 1 tsp toasted sesame seeds.
