- 1 cup, grated carrots
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt

- 1/4 cup, chopped fresh cilantro
- 2 tbsp olive oil
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp, chopped fresh mint
- 1/4 tsp garlic powder
Instructions
- Step 1: In a large bowl, combine 2 cups grated zucchini, 1 cup grated carrots, 1/2 cup all-purpose flour, 1 tsp baking powder, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 cup chopped cilantro; mix until uniformly moist.
- Step 2: Heat 2 tbsp olive oil in a non-stick skillet over medium heat. Drop mixture by 1/4-cup portions into skillet, flattening slightly with a spatula. Fry 3-4 minutes per side until golden brown and crisp.
- Step 3: Whisk 1/2 cup plain Greek yogurt, 1 tbsp lemon juice, 1 tbsp chopped mint, and 1/4 tsp garlic powder until smooth; serve as dip with fritters.
