Beef & Broccoli Stir-Fry with Ginger Scallion Sauce

Ingredients
- 12 oz beef flank steak
- 2 cups broccoli florets
- 3 tbsp avocado oil
- 1 tbsp ginger
- 4 scallions
- 2 tbsp fish sauce
- 1 tbsp coconut aminos
- 1 tsp sesame oil
- 1/2 tsp sea salt
Instructions
- Step 1: Thinly slice beef against the grain into 1/4-inch strips. Toss with 1/2 tsp salt and let sit for 10 minutes.
- Step 2: Finely mince ginger and slice scallions, separating green and white parts.
- Step 3: Heat 2 tbsp avocado oil in a large skillet over high heat until shimmering. Add beef in a single layer and sear for 1-2 minutes per side until browned but not cooked through. Transfer to a plate.
- Step 4: Add remaining 1 tbsp avocado oil to skillet, then stir-fry broccoli for 3-4 minutes until crisp-tender. Add minced ginger, white scallion parts, and 1/4 cup water, then cover and steam for 2 minutes.
- Step 5: Return beef to skillet. Whisk fish sauce, coconut aminos, sesame oil, and green scallions in a bowl, then pour over beef and broccoli. Toss for 1 minute until sauce thickens and coats everything.
