Beet and Cabbage Soup with Smoked Paprika

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 medium chopped onion and cook for 5 minutes until translucent. Stir in 3 minced garlic cloves and cook for 1 minute until fragrant.
  2. Step 2: Add 2 medium peeled and diced beets, 2 cups finely chopped cabbage, and 1 medium diced carrot to the pot. Stir well and cook for 5 minutes.
  3. Step 3: Pour in 4 cups vegetable broth, 1 tsp smoked paprika, 1 tbsp apple cider vinegar, 1 tsp salt, and 1/2 tsp black pepper. Bring to a boil, then reduce heat to low.
  4. Step 4: Cover and simmer for 30 minutes until beets are tender.
  5. Step 5: Stir in 1 tbsp chopped fresh dill and serve hot.
