Bok Choy and Tofu Stir-Fry
A quick and healthy stir-fry with tender tofu and crisp bok choy, seasoned in a savory-sweet sauce.

Ingredients
- 14 oz, firm, pressed and cut into 1-inch cubes tofu
- 2 tbsp vegetable oil
- 1 medium, thinly sliced onion
- 3 cloves, minced garlic
- 1 tbsp, minced ginger
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp cornstarch
- 1 lb, cut into 2-inch pieces (stems and leaves separated) bok choy
Instructions
- Step 1: In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp rice vinegar, 1 tbsp honey, and 1 tsp cornstarch; set aside.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add 1 medium thinly sliced onion and cook for 3 minutes until softened.
- Step 3: Add 3 minced garlic cloves and 1 tbsp minced ginger, stir-fry for 1 minute until fragrant.
- Step 4: Add 14 oz pressed and cubed tofu and cook for 5 minutes, stirring occasionally, until golden.
- Step 5: Add 2 inches of bok choy stems and cook for 2 minutes until slightly tender.
- Step 6: Add 1 lb bok choy leaves and the sauce mixture. Stir-fry for 3-4 minutes until the sauce thickens and coats the vegetables and tofu.
