Chilled Cucumber-Mint Soup

Ingredients
- 2 large cucumbers
- 1 cup plain yogurt
- 1/4 cup fresh mint
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cold water
- 1/4 cup red onion
Instructions
- Step 1: Peel and dice 2 large cucumbers. Blend with 1 cup plain yogurt, 1/4 cup chopped fresh mint, 2 tbsp lemon juice, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 cup cold water until smooth.
- Step 2: Strain mixture through a fine-mesh sieve into a bowl to remove pulp, discarding solids.
- Step 3: Chill soup in refrigerator for at least 1 hour to allow flavors to meld.
- Step 4: Stir in 1/4 cup diced red onion just before serving, adjusting salt and pepper to taste.
