Creamy Carrot-Celery Soup with Garden Herbs

- 2 tablespoons butter
- 1 medium onion
- 2 carrots
- 2 celery stalks
- 4 cups vegetable broth
- 1/2 cup heavy cream
Instructions
- Step 1: Melt 2 tablespoons butter in a large pot over medium heat. Add 1 diced medium onion, 2 diced carrots, and 2 diced celery stalks, and cook for 5 minutes until softened.
- Step 2: Add 4 cups vegetable broth, bring to a simmer, and cook for 20 minutes until vegetables are tender.
- Step 3: Remove pot from heat and blend with an immersion blender until smooth. Return to low heat and stir in 1/2 cup heavy cream. Season with salt and pepper to taste.
