Creamy Sun-Dried Tomato Pasta with Spinach and Lemon

Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1/4 cup, drained and chopped sun-dried tomatoes in oil
- 1/2 cup heavy cream
- 2 cups, packed fresh spinach
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a boil. Cook 8 oz penne pasta according to package directions until al dente, reserving 1/2 cup pasta water before draining.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and cook for 1 minute until fragrant but not browned.
- Step 3: Stir in 1/4 cup chopped sun-dried tomatoes and cook for 2 minutes to warm through.
- Step 4: Reduce heat to low, add 1/2 cup heavy cream, and simmer gently for 3 minutes until slightly thickened.
- Step 5: Add drained pasta, 2 cups fresh spinach, 1 tsp lemon zest, 1/4 tsp salt, and 1/8 tsp black pepper. Toss until spinach wilts and sauce coats pasta evenly, adding reserved pasta water as needed to reach desired consistency.
