Crisp-Peppered Pork Tenderloin with Apple-Apple Cider Glaze

Ingredients
- 1.5 lbs Pork tenderloin
- 1.5 tsp Coarse black pepper
- 2 tbsp Olive oil
- 1/2 cup Apple cider
- 1/2 cup Diced apple
- 1 tbsp Dijon mustard
- 1 tsp dried Thyme
- 1/2 tsp Salt
Instructions
- Step 1: Pat pork tenderloin dry with paper towels. Rub with 1 tsp coarse black pepper, 1/2 tsp salt, and 1 tbsp olive oil.
- Step 2: Heat remaining 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear pork for 3 minutes per side until golden brown.
- Step 3: Transfer skillet to a preheated oven at 400°F (200°C) and roast for 15-18 minutes until internal temperature reaches 145°F (63°C).
- Step 4: While pork rests, remove skillet from oven. Add apple cider, diced apple, Dijon mustard, and thyme to the pan, scraping up browned bits.
- Step 5: Simmer for 8-10 minutes until sauce thickens and reduces by half. Slice pork and drizzle with sauce before serving.
