English-Style Beef and Ale Pie with Crusty Pastry

Ingredients
- 12 oz diced beef chuck
- 1/2 cup dark beer
- 4 oz diced carrots
- 3 oz diced onions
- 1 tsp fresh chopped thyme
- 1 sheet puff pastry
- 1 tbsp beaten egg wash
Instructions
- Step 1: Brown beef chuck in a skillet over medium-high heat for 5-6 minutes until seared. Transfer to a baking dish. Add 3 oz diced onions, 4 oz diced carrots, 1 tsp fresh thyme, and 1/2 cup dark beer to the skillet. Simmer for 3 minutes, then pour over beef.
- Step 2: Cover dish with foil and bake at 375°F for 2 hours until beef is tender. Remove foil and let cool for 15 minutes.
- Step 3: Roll out puff pastry sheet and place over pie. Trim edges, crimp, and brush with 1 tbsp beaten egg wash. Bake uncovered for 20-25 minutes until pastry is golden brown.
