Fidelity-Style Creamy Mushroom Pasta

Ingredients
- 12 oz penne pasta
- 8 oz, sliced mushrooms
- 1, finely minced shallot
- 1 cup heavy cream
- 1/2 cup white wine
- 1 tsp, chopped fresh thyme
- 1/2 cup, grated Parmesan cheese
- 2 tbsp butter
Instructions
- Step 1: Cook 12 oz penne pasta in a large pot of salted boiling water until al dente, about 10 minutes. Reserve 1 cup pasta water before draining.
- Step 2: Melt 2 tbsp butter in a large skillet over medium heat. Add 1 minced shallot and cook for 2 minutes until translucent. Stir in 8 oz sliced mushrooms and cook for 6 minutes until golden.
- Step 3: Add 1/2 cup white wine and simmer until reduced by half. Stir in 1 cup heavy cream, 1 tsp chopped thyme, and 1/2 cup grated Parmesan. Cook for 3 minutes until slightly thickened. Toss with drained pasta and 1/4 cup reserved pasta water until creamy.
