Garlic Herb Penne with Roasted Cherry Tomatoes

Ingredients
- 12 oz penne pasta
- 2 tbsp olive oil
- 4 cloves, minced garlic
- 1 lb, halved cherry tomatoes
- 1/4 cup, chopped basil
- 1/2 tsp red pepper flakes
- 1/4 cup, grated Parmesan cheese
- to taste salt
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz penne pasta and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/2 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Add 1 lb halved cherry tomatoes to the skillet and cook for 5 minutes, stirring occasionally, until tomatoes soften and release juices.
- Step 4: Add drained penne to skillet with 1/4 cup reserved pasta water and 1/4 cup chopped basil. Toss vigorously for 1 minute until sauce coats pasta evenly.
- Step 5: Season with salt to taste, divide into bowls, and top with 1/4 cup grated Parmesan cheese.
