Garlic-Herb Roasted Pork Tenderloin

Ingredients
- 1.25 lbs pork tenderloin
- 2 tbsp olive oil
- 6 garlic cloves
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 12 oz carrots
- 8 oz parsnips
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Trim excess fat from 1.25 lbs pork tenderloin and slice into 1/2-inch thick medallions.
- Step 2: Toss 12 oz carrots and 8 oz parsnips with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp pepper on a sheet pan.
- Step 3: Mix 6 minced garlic cloves, 1 tbsp chopped thyme, 1 tbsp chopped rosemary, 1 tsp salt, 1/2 tsp pepper, and 1 tbsp olive oil in a bowl.
- Step 4: Rub garlic-herb mixture over pork medallions, then arrange on top of vegetables on the sheet pan.
- Step 5: Roast for 20-25 minutes until pork reaches 145°F (63°C) internally and vegetables are tender and caramelized.
