Garlic-Herb Roasted Pork Tenderloin

  1. Step 1: Preheat oven to 400°F (200°C). Trim excess fat from 1.25 lbs pork tenderloin and slice into 1/2-inch thick medallions.
  2. Step 2: Toss 12 oz carrots and 8 oz parsnips with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp pepper on a sheet pan.
  3. Step 3: Mix 6 minced garlic cloves, 1 tbsp chopped thyme, 1 tbsp chopped rosemary, 1 tsp salt, 1/2 tsp pepper, and 1 tbsp olive oil in a bowl.
  4. Step 4: Rub garlic-herb mixture over pork medallions, then arrange on top of vegetables on the sheet pan.
  5. Step 5: Roast for 20-25 minutes until pork reaches 145°F (63°C) internally and vegetables are tender and caramelized.
