Ginger-Garlic Vegetable Stir-Fry

Ingredients
- 2 tbsp vegetable oil
- 2 tbsp, minced fresh ginger
- 4 cloves, minced garlic
- 2 cups broccoli florets
- 1, sliced red bell pepper
- 1 cup snap peas
- 1/2 cup, sliced water chestnuts
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 cup, chopped scallions
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until smoking. Add 2 tbsp minced fresh ginger and 4 minced garlic cloves, stir-frying for 30 seconds until fragrant.
- Step 2: Add 2 cups broccoli florets, 1 sliced red bell pepper, and 1 cup snap peas. Stir-fry for 4 minutes until vegetables are crisp-tender.
- Step 3: Stir in 1/2 cup sliced water chestnuts, 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sesame oil. Cook for 2 more minutes until sauce coats vegetables.
- Step 4: Garnish with 1/4 cup chopped scallions and serve immediately with rice.
