Heirloom Tomato and Endive Soup

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat, add 2 minced garlic cloves, and cook for 1 minute until fragrant.
  2. Step 2: Add 2 cups chopped heirloom tomatoes and 1 cup chopped endive, then cook for 5 minutes until tomatoes begin to soften.
  3. Step 3: Pour in 4 cups vegetable broth, bring to a simmer, and cook for 15 minutes to meld flavors.
  4. Step 4: Stir in 1/4 cup chopped fresh basil, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tbsp lemon juice, then simmer for 2 more minutes.
  5. Step 5: Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
