- 1 cup French green lentils
- 3 cups Vegetable broth
- 1 cup, diced Carrots
- 1 cup, diced Parsnips
- 1, diced Yellow onion
- 3 cloves, minced Garlic
- 1 tsp, chopped Fresh rosemary
- 1 tbsp, chopped Fresh thyme
- 2 tbsp Olive oil
- 1 tsp Kosher salt
- 1/2 tsp Black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large Dutch oven over medium heat until shimmering. Add 1 diced yellow onion and cook for 4 minutes until softened and starting to brown at the edges.
- Step 2: Add 3 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to avoid burning.
- Step 3: Stir in 1 cup French green lentils, 1 cup diced carrots, 1 cup diced parsnips, 3 cups vegetable broth, 1 tsp chopped fresh rosemary, 1 tbsp chopped fresh thyme, 1 tsp kosher salt, and 1/2 tsp black pepper. Bring to a gentle boil.
- Step 4: Reduce heat to low, cover, and simmer for 45 minutes until lentils and vegetables are very tender, stirring once halfway through.
