Herb-Infused Pasta with Sun-Dried Tomatoes and Basil

- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/4 cup, oil-packed and chopped sun-dried tomatoes
- 1/2 cup, packed fresh basil
- 1/2 cup vegetable broth
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Bring 4 quarts of water to a rolling boil in a large pot. Add 1/2 tsp salt and 12 oz spaghetti, cooking for 8-10 minutes until al dente; reserve 1/2 cup pasta water before draining.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Stir in 1/4 cup chopped sun-dried tomatoes and 1/2 cup vegetable broth, simmering for 3 minutes until slightly reduced. Add 1/2 cup fresh basil, lemon zest, and 1/2 tsp salt, stirring until basil wilts.
- Step 4: Toss drained spaghetti with sauce, adding 2 tbsp reserved pasta water to create a glossy coating. Cook for 1 minute until sauce adheres to pasta.
