Homestyle Chicken and Buttermilk Dumplings

Ingredients
- 1.5 lbs Chicken thighs
- 1 medium Onion
- 2 medium Carrots
- 2 stalks Celery
- 4 cups Chicken broth
- 3 tbsp All-purpose flour
- 1 cup Buttermilk
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Butter
- 2 tbsp Parsley
Instructions
- Step 1: Place 1.5 lbs bone-in, skin-on chicken thighs in a large pot. Add 1 diced medium onion, 2 sliced medium carrots, and 2 diced celery stalks. Pour in 4 cups chicken broth and bring to a gentle simmer over medium heat.
- Step 2: Simmer uncovered for 30 minutes until chicken is cooked through. Skim off excess fat, then remove chicken and set aside.
- Step 3: Whisk 3 tbsp all-purpose flour, 1 tsp baking powder, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl. Stir in 1 cup buttermilk until just combined. Drop 1/2 cup batter (about 6 spoonfuls) into the simmering broth. Cover and cook on low for 15 minutes until dumplings are fluffy. Return chicken to pot, stir in 2 tbsp butter and 2 tbsp chopped parsley, and simmer for 5 more minutes.
