Honey-Glazed Carrot Cake Muffins

- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup honey
- 1/4 cup canola oil
- 1.5 cups grated carrots
- 1/2 cup confectioners' sugar
- 1 tbsp lemon juice
Instructions
- Step 1: Preheat oven to 375°F and line a muffin tin with paper liners. Whisk 1.5 cups all-purpose flour, 1 tsp baking powder, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, and 1/4 tsp salt in a bowl.
- Step 2: Beat 2 large eggs, 1/2 cup honey, and 1/4 cup canola oil in a separate bowl until smooth. Stir in 1.5 cups grated carrots. Gently fold in dry ingredients until just combined — do not overmix.
- Step 3: Divide batter into muffin cups. Bake for 20-22 minutes until a toothpick comes out clean. While warm, mix 1/2 cup confectioners' sugar with 1 tbsp lemon juice to make a glaze. Drizzle over muffins and let set for 15 minutes before serving.
