Honey-Soy Glazed Chicken Thighs with Crispy Roasted Potatoes

Ingredients
- 1 lb bone-in chicken thighs
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 cloves, minced garlic
- 1 lb, cubed potatoes
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat 1 lb bone-in chicken thighs dry with paper towels, then season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Toss 1 lb cubed potatoes with 2 tbsp olive oil, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Spread on a baking sheet and roast for 15 minutes until starting to brown.
- Step 3: In a small bowl, whisk together 3 tbsp honey, 2 tbsp soy sauce, and 2 minced garlic cloves. After 15 minutes, add chicken thighs skin-side up to the baking sheet with potatoes.
- Step 4: Brush chicken with half the honey mixture, then roast for 25 minutes more until chicken reaches 165°F and potatoes are golden and crisp, brushing with remaining honey sauce halfway through.
