Kombucha and Lemon Glazed Salmon with Roasted Asparagus

Ingredients
- 2 (6 ounces each) salmon fillets
- 1/4 cup kombucha
- 1 lemon
- 1 pound asparagus
- 2 tablespoons olive oil
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill
Instructions
- Step 1: Preheat oven to 400°F. Place salmon fillets skin-side down on a lined sheet pan; brush with 1 tablespoon olive oil, then sprinkle with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 2 minced garlic cloves.
- Step 2: Roast salmon for 12 minutes until cooked through; remove from oven and set aside.
- Step 3: Toss 1 pound trimmed asparagus with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper on a separate sheet pan; roast for 10 minutes until crisp-tender.
- Step 4: Whisk together 1/4 cup sugar-free kombucha, 2 tablespoons lemon juice, and 1 teaspoon lemon zest in a small bowl. Brush over salmon and return to oven for 3 minutes to glaze.
- Step 5: Serve salmon with roasted asparagus and sprinkle with 1 tablespoon fresh dill.
