Lemon-Glazed Asparagus Pasta with Fresh Herbs

Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 1 medium, diced red onion
- 2 cloves, minced garlic
- 1 cup, trimmed and cut into 1-inch pieces asparagus
- 1 cup fresh peas
- 1/4 cup lemon juice
- 1/4 cup, chopped fresh basil
- 1/4 cup, grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 diced red onion and cook for 5 minutes until softened, then add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Add 1 cup asparagus and 1 cup peas to the skillet, stirring to coat in oil, and cook for 4 minutes until asparagus is tender-crisp.
- Step 4: Add the drained spaghetti to the skillet, then add 1/4 cup lemon juice, 1/2 cup reserved pasta water, and 1/4 cup grated parmesan. Toss for 2 minutes until the sauce thickens and coats the pasta, adding more pasta water if needed to reach desired consistency.
- Step 5: Stir in 1/4 cup chopped fresh basil, 1/2 tsp salt, and 1/4 tsp black pepper. Serve immediately.
