Mini Veggie and Hummus Pinwheels

Ingredients
- 1 tube (7 oz) whole wheat tortillas
- 1/2 cup hummus
- 1/2 cup shredded carrots
- 1/4 cup thinly sliced red bell pepper
- 1/4 cup thinly sliced cucumber
Instructions
- Step 1: Unroll the whole wheat tortillas and spread 1/2 cup hummus evenly over each tortilla, leaving a 1/2-inch border around edges.
- Step 2: Sprinkle 1/2 cup shredded carrots, 1/4 cup thinly sliced red bell pepper, and 1/4 cup thinly sliced cucumber evenly over the hummus layer.
- Step 3: Roll each tortilla tightly from the bottom edge to the top, using the edges to hold fillings in place. Repeat for all tortillas.
- Step 4: Cut each roll into 8 equal slices and arrange on a platter. Serve immediately for best texture.
