  1. Step 1: Chop 2 large peeled cucumbers, 1/4 cup diced red bell pepper, 1/4 cup diced red onion, and 3 minced garlic cloves. Pulse in a food processor until finely chopped but not pureed.
  2. Step 2: Add 1/2 cup tomato juice, 1/4 cup extra-virgin olive oil, 2 tablespoons lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Blend until smooth, about 1 minute.
