Miso-Caramelized Peach Sushi Rolls

Ingredients
- 3, pitted and sliced into 1/4-inch thick wedges ripe peaches
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1 tsp rice vinegar
- 2 cups, cooked short-grain sushi rice
- 4, cut into quarters nori sheets
- 1 tsp wasabi
- 2 tbsp, thinly sliced pickled ginger
Instructions
- Step 1: Combine miso paste, maple syrup, and rice vinegar in a small saucepan. Simmer over medium heat for 3 minutes until slightly thickened, stirring constantly.
- Step 2: Add peach wedges to sauce, turning to coat. Cook for 2-3 minutes until peaches are glossy and edges are caramelized.
- Step 3: Lay a nori quarter shiny-side down on a bamboo mat. Spread 1/4 cup sushi rice evenly over nori, leaving 1-inch border at top.
- Step 4: Place 3 caramelized peach wedges horizontally on rice, then roll tightly using the mat, pressing gently to seal.
- Step 5: Slice each roll into 3 pieces, arrange on a plate with wasabi and pickled ginger on the side.
