Miso-Simmered Root Vegetable Soup with Toasted Sesame

Ingredients
- 2 medium, peeled and diced into 1/2-inch cubes carrots
- 2 medium, peeled and diced into 1/2-inch cubes parsnips
- 1 large, finely chopped onion
- 3 cloves, minced garlic
- 2 tbsp white miso miso paste
- 4 cups vegetable broth
- 1 tsp toasted sesame seeds
- 1/2 tsp toasted sesame oil
Instructions
- Step 1: Heat 1 tbsp olive oil in a medium pot over medium heat. Add onions and cook for 5 minutes until translucent, stirring occasionally.
- Step 2: Add carrots, parsnips, and garlic. Cook for 8 minutes, stirring frequently, until vegetables begin to soften and release their aroma.
- Step 3: Pour in vegetable broth and bring to a gentle simmer. Reduce heat to low, cover, and cook for 20 minutes until vegetables are fork-tender.
- Step 4: Remove pot from heat. Stir in miso paste until fully dissolved, then add sesame oil and simmer for 2 minutes without boiling.
- Step 5: Ladle into bowls and sprinkle with 1/2 tsp toasted sesame seeds per serving.
